Refreshing Summer Treats

Stay cool this summer with these refreshing treats!


Prosecco + Peach Popsicles 

I found TONS of different variations of this recipe online, I tried a few different recipes and found one I like best! I’m not one for really really sweet drinks so I only added one ounce of simple syrup. I also opted for a very dry prosecco, so just adjust the recipe depending on whether you like sweet or dry drinks!

What you need – 

  • Popsicle molds (a thicker more “standard” mold works best if you want to take great Instagram photos of your creation!)
  • Bottle of Prosecco – you can choose a sweeter or more dry brand depending on your taste preference
  • Simple syrup (you can make this easily at home OR buy a pre-made syrup from wal-mart)
  • 1 fresh peach
  • Large mixing bowl + wooden spoon + ladle

What you do – 

  • Slice your peaches and set aside
  • Pour champagne into a large bowl
  • Add simple syrup to your prosecco (1 or 2 pumps if using a pre-made brand. 1 ounce if you made it yourself. Taste test and add more if necessary!)
  • Whisk with a fork to make sure it’s thoroughly mixed together.
  • With a ladle, pour contents into your popsicle mold
  • Add 1 or two peach slices per mold & freeze for 4 hours or until frozen thoroughly!
  • *keep in mind* THESE ARE NOT KID-FRIENDLY! You will have about 1 oz of alcohol per-pop!

Strawberry Cucumber Iced Tea 

This one is my personal recipe & my absolute favourite thing to make in the Summer! It’s so refreshing & light and makes a great addition to any summer BBQ!

 

What you need – 

  • Mudler
  • 9 Strawberries, diced
  • 1 Cucumber, diced
  • Simple Syrup
  • Orange Pekoe tea

What you do – 

  1. Brew a pot of orange pekoe tea, or boil a pot of water and add 4 tea bags
  2. Add simple syrup (according to your sweetness preference)
  3. Pour tea into a pitcher & cool for about two hours
  4. Muddle the strawberries and cucumbers together in a glass.
  5. Once your iced tea is fully chilled, add a spoon full of your muddled strawberries and cucumbers in the glass you’re going to serve it in
  6. Pour the chilled iced tea on top (This will create that beautiful ombre effect!)
  7. Garnish with lemon

Creamy Raspberry Popsicle

These popsicles are so CREAMY & DREAMY. You can substitute any berries or fruit so get creative! You can also sub the vanilla greek yogurt for whatever flavour you prefer!

What you need – 

  • 12 oz fresh or frozen raspberries
  • Popsicle molds
  • 3 cups vanilla greek yogurt
  • 1/4 cup of heavy cream
  • 2 tablespoons of sugar
  • 1/4 cup of sugar separate from the 2 tablespoons (this is optional, depending how sweet you want them)

What you do –

  1. In a small cup, add the raspberries & 2 tablespoons of sugar and set aside
  2. In a different bowl, combine the greek yogurt + heavy cream & the optional 1/4 cup of sugar
  3. Whisk the mixture until your sugar is thoroughly dissolved
  4. Mix your raspberry mix into your yogurt mixture
  5. using a spatula, gently fold the raspberries in (if you want that marbled look, don’t mix too much)
  6. Pour your mixture into your popsicle molds. Freeze for at least 4 hours!
